Turkish Food by Region
Istanbul and the Marmara
Two shores, two mornings. Kadıköy still shops for home kitchens: fish, herbs, cheese, simit, tea in small curved glasses. The historic peninsula’s Spice Bazaar is the spice classroom — isot is dark and oily, dyed paprika is not — and Eminönü’s balık ekmek is worth eating only when the stall is busy. Meyhane culture, shared meze and optional rakı, sits in Karaköy and Asmalımescit at night, not at a Sultanahmet terrace facing a mosque. Book the walk at /tours/istanbul/food-tour.
Aegean olive-oil coast
Izmir’s morning pastry is boyoz, flaky and Sephardic, eaten with egg and tea before noon. The region’s real skill is zeytinyağlı: vegetables cooked in olive oil and served cool. Artichokes in spring, beans, stuffed leaves, bitter green oil from Ayvalık. This is the vegetarian heart of the country. The day tour is /tours/izmir/aegean-food-tour.
Mediterranean Antalya
Piyaz — white beans, tahini, onion, sumac — is Antalya’s signature, not a side. Citrus and pomegranate follow the coast. Harbour fish is good when it turns over; the first row of Kaleiçi tables facing a cruise ship is the wrong test. See /tours/antalya/mediterranean-food-tour.
Cappadocia and central Anatolia
Testi kebab is meat and vegetables sealed in clay and cracked open at the table. Mantı is tiny dumplings under yogurt and butter. Avanos throws the pots from Kızılırmak clay. The local white grape is Emir, grown on tuff. Cave-hotel breakfasts are generous and still not a substitute for that lunch. The day is /tours/cappadocia/food-and-wine-tour.
Southeast: Gaziantep, Urfa, Mardin
Gaziantep is the UNESCO gastronomy city: pistachio baklava rolled in workshops, Ali Nazik (smoked eggplant under meat), lahmacun. Urfa’s pepper, isot, is dark and raisin-like; Urfa kebap is milder than Adana. Mardin is a different city: kaburga dolması, içli köfte, terrace breakfasts over the plain. Do not collapse them into one ‘eastern buffet’. Mardin’s day is /tours/mardin/mesopotamian-food-tour. Gaziantep is a day inside /packages/southeast-turkey-heritage and /packages/10-day-turkey-culinary-tour.
Van breakfast and the Black Sea
Van’s kahvaltı is the reason to start the morning in a salon: otlu peynir with wild herbs, kavut with butter, kaymak, highland honey. It is a two-hour spread, not a buffet line. The Black Sea, when you add it, is hamsi anchovy season and kuymak, a cornmeal-and-cheese pull, not another kebap. Van’s morning is /tours/van/van-breakfast-tour.
How to turn the map into days
Half a day is one city tasting. Three days is Istanbul only: /packages/3-day-istanbul-food-tour. Five adds Cappadocia. Seven adds the Aegean. Ten reaches Mardin and Gaziantep. Classic monument routes of 5, 7, 10 and 14 days stay on their own package URLs so a food trip and a first-time highlights trip do not compete for the same search. The hub is /turkey-food-tours.
